I sent out a madeleine recipe earlier this week that I’ll be piggybacking off of today. This recipe is for madeleine ice cream sandwiches (a perfect use for any day-old madeleines).


I love these for a few reasons:
1) They look like a little shell with a pearl in the center
2) They’re only a few bites, which means it’s gone before it can get all over your hands
3) They’re a great way to finish up day-old madeleines, as they’re softer and cakier at this point
4) You can dip these tiny ice cream sandwiches in espresso for an affogato/tiramisu moment or serve them with hot fudge or caramel sauce for a handheld sundae moment
I have included recipes for hot fudge and caramel sauce below if you want to make a sundae version of the pearl/shell ice cream sandwiches. I love both of these recipes so much.
With that being said, my favorite accompaniment is a little cup of espresso. It’s not only less effort, but I love how the bitterness of the espresso plays with the sweet ice cream and soaks the cake (I say this as someone who is not a huge fan of the affogato). It is like tiramisu in ice cream sandwich form. So, with all that said, if you plan on making this for guests I would opt for the espresso accompaniment. It’s such a cute pairing and it’s also super convenient for dipping.
