i have to start by saying that it is a hard task to improve upon the already perfect s’more (i’m speaking from experience here, i’ve tried to emulate the s’more in many different dessert formats, but unless you get that balance between those beautiful textures and flavors - it does not compare to the original). few iterations can get the right balance of crispy crunchy graham cracker, melty smooth chocolate, and gooey sticky and toasty marshmallow. but this interpretation of a s’more has all that and more.
i developed a recipe for a s’mores tart last year, but this year’s version is far better because it is yummier and takes less time.i have traded in the chocolate crémeux filling for chocolate pot de créme, which means less work, fewer ingredients, fewer kitchen tools, and less time to set up. I’ve also reworked the marshmallow recipe to be fluffier and less chewy than last year’s, complimenting the dense and creamy filling, and the crunchy buttery crust, better. speaking of crust, the only product containing gluten in this recipe is graham crackers, so if you use gluten free graham crackers this dessert is gluten free.
another thing i love about this recipe is that it can be made in advance. you can make the whole tart up to the marshmallow part, place it in the freezer, and on the day you want to serve it you just bring it up to room temperature and make the marshmallow (yes a scary part, but also not very active-time intensive).
*also if you want to make this recipe but are too scared to make marshmallows, or you don’t own a stand mixer, you can totally top the tart with store-bought ones (or maybe even marshmallow fluff, but idk i haven’t tried that). if, on the other hand, you just need a little push to make your first batch of homemade marshmallows, they truly are worth the effort and are better than store bought - i promise it’s not as scary as it seems, you just need to watch the thermometer closely.
